I've been on a tamale kick lately. They're time consuming especially if you're working solo but so worth it since they freeze easily.
Prepping:
Top to bottom: 1. Premade Masa 2. Husks softening on the stove 3. Fillings: Clockwise from top-Chorizo with mole sauce, seasoned chicken, chicken with mole sauce 4. My "assembly line on the kitchen
Assembling:
Top to bottom: 1. Masa spread in the husk 2. Chorizo filling 3. folding up the tamale 4. All tied up!
Top to bottom: 1. One tamale waiting for many more to fill up the steamer 2. Mom's helpers carrying the full steamer to the stove 3. All cooked and ready to eat!
